麦香素鱼卷
Oat Mock Fish roll

┃INGREDIENT┃
15pcs round gluten, 2 sheets 6 X 7 ½ inches seaweed, 2 sheets 9 X 7 inches bean curd skin

┃BATTER┃
1 tbsp plain flour, 3 tbsp water

┃SEASONING┃
½ tsp pepper, 1 tbsp ginger juice, 2 tbsp soy bean powder, 3 tbsp oat, ½ tsp salt, ½ tsp sesame oil

┃METHOD┃
1. Combine water with plain flour into batter, set aside. (pic 1)
2. Cut gluten into long strips and marinate with seasoning as filling. (pic 2)
3. Place bean curd skin on table top, spread with some batter, top with seaweed sheet and put some filling on it; roll up, tuck in both ends and wrap with cellophane paper. (pic 3-4)
4. Steam the mock fish roll with medium heat for 20-25 minutes; cut into slices after cooling down. (pic 5)

┃材料┃
圆豆包(蛋包)15块、紫菜2张6×7½”、淡腐皮2张9×7”

┃面糊┃
面粉1汤匙、清水3汤匙

┃调味料┃
胡椒粉½茶匙、姜汁1汤匙、豆奶粉2汤匙、麦片3汤匙、盐½茶匙、麻油½茶匙

┃做法┃
1. 将清水和面粉拌匀面糊待用。(图1)
2. 把圆豆包切成长粗条,加入调味料拌均匀。(图 2)
3. 把腐皮铺开,涂上少许面糊,铺上紫菜然后舀入½份素鱼馅料,卷起,并将头尾两端塞进,再用玻璃纸包好。(图3-4)
4. 把麦香素鱼卷放在预热蒸锅里,以中火蒸20-25分钟,盛起待凉后才切块用。(图5)
