250g beef ribs eye, salt and pepper as need, 2 sprigs thyme, 2 nos garlic, 2 tbsp olive oil, 5 stick asparagus, 150ml beef sauce
400g US potato, 100g whipping cream, 2 tbsp butter, 10nos garlic clove
1. Boil potato and garlic until soft, strain away water and mash it. Stir in whipping cream,butter and season it with salt. Set aside. (pic 1-2)
2. Season the beef with salt, pepper, thyme and garlic , let it marinate 30 minutes. Preheat non-stick pan with high heat, pour 2 tbsp of olive oil and sear the beef each side 3 minutes. Let it rest 5 minutes. (pic 3)
3. Using the same pan to cook asparagus and finish with salt pepper.(pic 4)
4. Spoon 2 tbsp of garlic mash potato on plate, asparagus on side and beef on top. Served with beef jus.
