自制午餐肉

┃INGREDIENT┃
300g minced meat, 1 egg white, 2 tbsp cornflour, 2 tbsp plain flour, 1 tbsp water

┃SEASONING┃
1 tbsp oyster sauce, 1 tsp 5 spiced powder, ½ tsp pepper, 1 tsp each of ginger powder, garlic powder and palm sugar, ½ tsp sea salt, 1 tbsp sesame oil, 1 tsp Beetroot powder (for coloring)

┃TOOLS┃
1 Disposable glove, 1 sheet aluminum foil

┃METHOD┃
1. Wear glove to blend minced meat with all seasoning until well mixed. Add in egg white and continue to mix.(pic 1)
2. Add in corn flour, plain flour and water; blend until springy. (pic 2)
3. Place the patties on heat proof dish, cover with aluminum foil and double boil for 35 minutes. (pic 3)
4. Let cool, cut luncheon meat in slices to sear and serve. (pic 4)

┃材料┃
猪绞肉300g、鸡蛋白1颗、粟米粉2汤匙、面粉2汤匙、纯净水1汤匙

┃调味料┃
蚝油1汤匙、五香粉1茶匙、胡椒粉½茶匙、姜粉1茶匙、蒜粉1茶匙、黄糖1茶匙、海鹽½茶匙、麻油 1湯匙、甜菜根粉1茶匙 (用來提色,可有可無)

┃工具┃
1次性料理手套、錫紙1張

┃做法┃
1. 将猪绞肉与所有的调味里混合均匀至入味。加入蛋白,继续搅拌均匀。(图1)
2. 加入粟米粉、面粉和纯净水,拌至有起胶、有粘性。(图2)
3. 将肉泥放进耐热模具里,压紧,盖上锡纸,隔水蒸约35分钟后取出。(图3)
4. 待凉后,即可切片,现吃或下锅香煎再享用亦可。(图4)
