脆皮饺子
Crispy Dumpling

【Cold Dumpling Dough Ingredients】
200g all-purpose flour, 80-90g water, ½ tsp salt
【Method】
1. Place flour and salt in a big mixing bowl, dig a well in the center, pour in water slowly and knead into smooth dough; cover with wet muslin for 30 minutes. (pic 1)
2. Separate dough into 2 portions, knead each into long strip; and then cut into small pieces with thumb and index finger; flatten and pin roll into thin dumpling Wrappers. (pic 2-3)

【Filling Ingredients】
150g minced meat, 200g shrimp, 3 pcs water chestnut (smashed and chopped), 40g chives(chopped)
【Seasoning】
½ tsp salt, 1 tsp chicken powder, dash of pepper, ½ tsp sugar, 1 tsp corn flour

【Method】
1. Mixes all filling ingredients with seasoning.(pic 4)
2. Wrap each wrapper with some filling, fold them over and pinch into dumpling shape.(pic 5-7)
3. Steam in high heat for 5 minutes; let cool down before deep fry in hot oil until crispy, drain and serve.(pic 8)

【冷面皮材料】
中筋面粉200克、清水80-90克、盐½茶匙
【做法】
1. 把面粉、盐放入大盆中,中间开穴,徐徐倒入水搓揉成光滑面团,盖上湿布半小时。(图1)
2. 把面团切开2份,每份搓成长条,用拇指和食指握着面团一端分成小粒,用擀面棍将面团擀薄成饺子皮。(图2-3)

【馅料】
150克肉碎、200克虾仁、3粒马蹄(拍扁剁碎)、40克韭菜
(切粒)
【调味料】
盐½茶匙、鸡精粉1茶匙、胡椒粉少许、糖¼茶匙、粟粉1茶匙

【做法】
1. 把馅材料与调味料充份拌匀,即成馅料备用。(图4)
2. 将每片面皮包入适量馅料,对摺后折成饺子形。(图5-7)
3. 待蒸锅水烧开后,移入大火蒸5分钟,待冷后,放入热油中炸脆,捞出沥油,便可享用。(图8)
