素仁当黄姜粽
Vegetarian Kunyit Rendang Chang

【Ingredients】
A: 650g vegetarian chicken (cut small), 125 ml cooking oil,
B: 2 tbsps beriani powder + 2 tbsps water to make paste, 3 tsp mushroom powder, 40g ‘kerisek’, 150ml santan, 2 turmeric leaves (sliced), 4-5 kaffir lime leaves(sliced), 50g brown sugar, salt to taste
C: 500g glutinous rice, 1 tsp turmeric powder, salt to taste
D: Hemp string for tying, some pandan leaves (cut into 3cm lengths), 25-30 pcs dried bamboo leaves (soaked & washed)
【Spice paste】
15 stalks dried chilly, 2 stalks lemon grass, 15g lengkuas, 15g fresh turmeric

【Method】
1. Wash glutinous rice and then soak with 1 tsp fresh turmeric kunyit powder for a minimum 4 hours, drain and add salt to taste.(pic 1)
2. To prepare filling: Finely ground spice ingredients into paste.
3. Heat oil, sauté finely ground spice paste, add in “beriani” paste, mushroom powder and chicken meat, sauté for 30 seconds until fragrant. (pic 2-3)
4. Add in seasnings, coconut milk, kerisek, turmeric leaves and kaffir lime leaves, adjust seasonings to taste. (pic 4-5)
【To wrap】
1. Take 2 washed bamboo leaves and form a cone, line with about 1 tbsp glutinous rice, put 2 tbsps filling over rice and cover with extra glutinous rice.(pic 6-7)
2. Top with a pandan leaf, press down to compress dumpling and wrap up. Tie tightly with a hemp string. (pic 8-9)
3. Boil a large pot of water with salt, immerse all dumplings and cook for 2 hours, remove from pot and drain. (pic 10)

【材料】
A:素鸡650克(剁成粗块)、食油125毫升、
B:印度油饭混合香料粉1包+清水2汤匙、香菇粉3茶匙、椰丝40克、椰浆150毫升、黄姜叶2片(切丝)、疯柑叶4-5片(切丝)、黄糖50克、盐适量
C:糯米500克、黄姜粉1茶匙、盐适量
D:草绳、班兰叶数片(切成3cm大小)、粽叶25-30片(洗
净抹干)
【研磨香料】
辣椒干15条、香茅2枝、蓝姜15克、黄姜15克

【做法】
1. 把糯米洗净,加黄姜粉和水浸泡至少4小时,沥干,拌入盐待用。(图1)
2. 馅料做法:把全部研磨香料放入电动搅拌器内研磨成糊料。
3. 起锅热油,爆香研磨香料,加入印度油饭混合香料、香菇粉及素鸡碎,炒30秒钟。(图2-3)
4. 再加入椰浆、椰丝、黄姜叶及疯柑叶丝和调味料炒匀盛出。(图4-5)
【组合】
1. 用2片粽叶摺成漏斗状,舀入1汤匙糯米,再放入2汤匙馅料, 再以糯米覆盖。(图6-7)
2. 叠上一片班兰叶,压紧,把粽叶下折扎紧以草绳捆扎。(图8-9)
3. 煮滚一大锅水,加盐;然后把所有粽子放入煮2小时, 取出滴干即可。(图10)
