【Dumpling Dough Ingredients】
200g all-purpose flour, 60g boiling water, ½ tsp salt, 30-40g cold water
1. Place flour and salt in a big mixing bowl, dig a well in the center, pour in boiling water and stir with chopstick and then slowly add in cold water and knead into smooth dough; cover with wet muslin for 30 minutes.
2. Separate dough into 2 portions, knead each into long strip; and then cut into small pieces with thumb and index finger; flatten and pin roll into side thin while thick at center dumpling wrappers.
200g minced meat, 20g chopped black fungus , 30g chopped cabbage, 20g chopped carrot, 1 tbsp chopped spring onion
1 tbsp soy sauce, 1 tsp chicken powder, ½ tsp salt, dash of pepper and sugar, 1 tsp sesame oil, 1 tsp corn flour
1. Mixes filling ingredients with seasoning and set aside.(pic 1-2)
2. Moist the side of dumpling wrappers with some water, line 5 wrappers in a row by overlapping each other; and then place some filling on the center in straight line, fold over and roll up to form a rose shape. (pic 2-6)
3. Heat some oil in non-stick pan, put in rose dumpling, and then pour in 1 cup of light starchy water, cover with lid and boil for about 15 minutes; open the lid, continue sear until the bottom are lightly burnt, dish out and serve. (pic 7-8)
