玫瑰饺子
Rose Dumpling

【Dumpling Dough Ingredients】
200g all-purpose flour, 60g boiling water, ½ tsp salt, 30-40g cold water
【Method】
1. Place flour and salt in a big mixing bowl, dig a well in the center, pour in boiling water and stir with chopstick and then slowly add in cold water and knead into smooth dough; cover with wet muslin for 30 minutes.
2. Separate dough into 2 portions, knead each into long strip; and then cut into small pieces with thumb and index finger; flatten and pin roll into side thin while thick at center dumpling wrappers.

【Filling】
200g minced meat, 20g chopped black fungus , 30g chopped cabbage, 20g chopped carrot, 1 tbsp chopped spring onion
【Seasoning】
1 tbsp soy sauce, 1 tsp chicken powder, ½ tsp salt, dash of pepper and sugar, 1 tsp sesame oil, 1 tsp corn flour
【Method】
1. Mixes filling ingredients with seasoning and set aside.(pic 1-2)
2. Moist the side of dumpling wrappers with some water, line 5 wrappers in a row by overlapping each other; and then place some filling on the center in straight line, fold over and roll up to form a rose shape. (pic 2-6)
3. Heat some oil in non-stick pan, put in rose dumpling, and then pour in 1 cup of light starchy water, cover with lid and boil for about 15 minutes; open the lid, continue sear until the bottom are lightly burnt, dish out and serve. (pic 7-8)

【烫面皮材料】
200克中筋面粉、60克滚水、½茶匙盐、约30-40克冷水
【做法】
1. 把面粉和盐放入大盆中,中间开穴,先倒入滚水用筷子拌匀,慢慢加入冷水揉成光滑面团,用一块挤乾水的湿布盖密,置放半小时。
2. 然后把面团切开2份,每份搓成长条,用食指和拇指将面团揪成小粒,每粒面团按扁,用擀面棍擀成边沿稀薄,中央稍厚的饺子皮。

【馅料】
猪肉碎200克、黑木耳碎20克、包菜30克(切碎)、红罗卜20克(切碎)、青葱末1汤匙
【调味料】
生抽1汤匙、鸡精粉1茶匙、盐¼茶匙、胡椒粉少许、糖少许、麻油1茶匙、粟粉1茶匙
【做法】
1. 把馅料与调味料充份混合均匀,备用。(图1-2)
2. 将5片饺子皮边沿沾少许水,交叠排成一行,再舀入馅料置放入饺皮中间排成一线,把水饺皮对摺,然后从旁边卷起来,形成玫瑰花状。(图3-6)
3. 在不黏锅热少许油,放入玫瑰花饺,然后注入约一杯薄太白粉水,盖上锅盖炆煎约15分钟,然后打开锅盖, 继续煎至底部脆皮焦黄,即可起锅盛碟。(图7-8)
