猫咪月饼
Kitty Cat Mooncake

【Skin Ingredients】
250g golden syrup(store bought), 110 ml peanut oil, 1 tsp lye water, 430g plain flour(sifted)
Brown food colouring, Egg white, Nozzle, extra 10 g plain flour
Egg wash: 1 egg yolk + 1⁄2 tbsp milk + 1⁄2 tbsp oil
【To prepare skin】
1.In a mixing bowl combine golden syrup, cooking oil & alkaline water together. Stand for 1 hour. (pic 1)
2.Slowly mix in flour. Dough will be very soft & sticks to your hands at this stage. Cover dough with a cling film. Rest dough for another hour. Apportion dough into 50g each.(pic 2)

【Filling ingredients】
600g YU-AI red bean paste, 80g orange peel, 50g toasted sunflower seeds, 100g choc chips

【To assemble】
1. Combine all filling ingredients and scale 50 g portions. (pic 3)
2. Take about 30 g dough and mix with some brown food colouring, set aside. This will be for the eyes & nose.
3. Wrap the skin over the filling shaping like a ball and place on a greased tray. (pic 4)
4. Using the back of a nozzle, mark the cat’s mouth in 2 circles overlapping. (pic 5)
5. Then poke 2 eyes and a nose using the back of a brush, brush the holes with some egg white.(pic 6)
6. Now shape small triangles for the ears.Using the spatula mark the ear position, brush some egg white & place the triangle shaped dough as ears.(pic 7)
7. Shape small brown balls for the eyes and a bigger ball for the nose. Stick into the marked locations. (pic 8)
8. Using a thin brush draw the mouth, whiskers on the left & right and lastly the stripes on the forehead. (pic 9)
9. Repeat steps and bake in preheated oven @ 170℃ for 10 minutes, before removing from oven to brush with the egg wash.(pic 10)
10. Return to oven and bake further 10 minutes and remove to cool the kitty cat mooncake.

【皮料】
现买金黄糖浆250克、花生油110克、砚水1茶匙、普通面粉430克(筛过)
褐色素少许、蛋白、钻嘴、额外面粉10克
蛋液:打散蛋黄1个+1⁄2汤匙牛奶+ 1⁄2汤匙油
【饼皮做法】
1.把金黄糖浆、油及砚水拌匀,放置1小时后才加粉。(图1)
2.加入面粉,搅拌成黏手软面团。用保鲜膜盖紧面团,让它醒1小时,然后分成50克等份。(图2)

【馅料】
友爱红豆沙馅600克、橙皮80克、太阳花籽50克、巧克力粒100克
【月饼组合】
1.把所有馅料混合后分成50克等份。(图3)
2.取30克面团和褐色素混合后置放一旁,留做眼睛和鼻子用。
3.把1份面皮包1份馅料,搓圆后放在涂油烤盘上面。(图4)
4.用钻嘴的后面做两个交叠的圆形,凑成嘴形。(图5)
5.然后用刷笔的杆戳出眼睛和鼻孔,然后刷上蛋白。(图6)
6.跟着做三角形面皮当耳朵。用杓子标出耳朵的位置,涂上蛋白后黏上耳朵面皮。(图7)
7.用褐色面团搓小球,小的做眼睛,大的做鼻子,然后贴在穿洞的位置。(图8)
8.用小刷子画出嘴形、胡须及额头。(图9)
9.重复步骤至材料用尽,然后全部放入预热至170℃ 的烤炉里烤 10分钟,取出刷上蛋液。(图10)
10.再入烤炉烤多10分钟即可。
