咸蛋豆腐羹
Salted Egg Tofu Soup

┃INGREDIENT┃
1 box soft tofu (juliennes), 3 cooked salted egg yolk (crushed), 1 salted egg white (beaten), 1 egg (beaten), 60g crab meat (steamed), 1 cup stock, some chopped spring onion

┃SEASONING┃
1 tsp chicken powder, dash of salt and pepper, 1 tsp sesame oil, 1 tsp fish sauce, 1 tbsp Chinese cooking wine

┃THICKENING┃
½ tbsp tapioca flour, ½ tbsp corn flour, 3-4 tbsp water, mixes well

┃METHOD┃
1. Juliennes soft tofu, set aside. (pic 1)
2. Steam salted egg yolk and crush, set aside. (pic 2)
3. Heat some oil in wok, sauté salted egg yolk until fragrant. (pic 3-4)
4. Pour in stock and tofu, bring to boil. (pic 5)
5. Add in crab meat and seasoning, let boil again. (pic 6)
6. Pour in egg sauce slowly and then thicken with starch, done. (pic 7-8)

┃材料┃
嫩豆腐1盒、咸蛋黄3粒、咸蛋青1粒(打散)、鸡蛋1粒(打散)、蚧肉60克(蒸熟)、上汤1杯、青葱粒少许

┃调味料┃
鸡精粉1茶匙、盐少许、胡椒粉少许、麻油1茶匙、鱼露1茶匙、绍兴酒1汤匙

┃勾芡┃
风车粉½汤匙、粟粉½汤匙、水3-4汤匙(拌匀)

┃做法┃
1. 将豆腐洗净切细丝。(图1)
2. 把咸蛋黄蒸熟切碎。(图2)
3. 烧热少许油,放入咸蛋黄炒香至出味。(图3-4)
4. 注入上汤,并加入豆腐丝煮滚。(图5)
5. 加入蚧肉及调味料,煮滚。(图6)
6. 徐徐倒入蛋液,并勾芡成羹,即可上桌。(图7-8)
